Making Mint and Feta Dip

Imagine this: Your tummy’s grumbling but you’re hours away before dinner. You decide to snack on something but feel really guilty about those sour cream chips or Kit Kat bars waiting in the pantry. So you want the in-between— something not too wholesome (a cup of organic dried nuts and seeds, anybody?) but not too unhealthy either. 
The answer? Mint and feta cheese on sliced baguettes. I learnt of this recipe after watching Gordon Ramsay’s Home Cooking, in which he originally makes bruschettas out of grilled courgettes and ricotta cheese. You could definitely whip that one up (Ramsay’s recipe is tried-and-true delicious; I even made it with yellow zucchinis apart from courgettes) or you could try this ‘lazier’ version instead: 
In a small bowl, put three generous dollops of cottage cheese. Take three teaspoons of feta cheese and mix well with a handful of crushed mints. Sprinkle with a pinch of cayenne pepper and pepper flakes. Serve on your choice of bread. 
This dip is downright creamy with a tinge of sourness and absolutely hearty with all that bread. Easy peasy, no?
